Heritage Restaurant Announces Culinary Team

Whitney Peak Hotel, localted on Sierra Street and due to open within weeks now, has released details on new additions to its culinary team, which is being led by downtown enthusiast Mark Estee, managing partner of the hotel’s new restaurant, Heritage.

Chris Schiavone has joined the team as Food & Beverage Director for the hotel. Prior to joining Whitney Peak, Schiavone was the general manager of Charlie Palmer Steak at the Grand Sierra Resort and Casino in Reno. He also served as the beverage manager for the Atlantis Casino Resort Spa and the Grand Sierra Resort and Casino.

Adam Bronson has joined Heritage restaurant as Chef. He received his culinary degree at Johnson County Community College in Overland Park, Kansas. Bronson moved to the Reno-Tahoe area a decade ago and has served at the helm of several clubs, casino rooms and independent restaurants, including Bistro Napa and Old Granite Street Eatery.

Josh Berreman has also joined Heritage restaurant as Chef. He received his culinary degree at Truckee Meadows Community College in Reno. Berreman moved to the Reno-Tahoe area in 1991 and has held culinary positions, including sous chef and chef, at a number of acclaimed restaurants, including Chez Louie, Campo, Brasserie St. James, 4th Street Bistro, and Beaujolais Bistro.

Shakka Moore will also join the team as the opening Banquet Chef. Moore will be responsible for the banquet program at Whitney Peak, while continuing his work as Chef at chez louie, located at the Nevada Museum of Art.

The 4,000-square-foot Heritage restaurant will feature an open kitchen, along with an expansive bar serving craft beers, local wines, and unique cocktails.
